York Minster, York, UK
Archbishop Walter de Gray started work on York Minster in 1220, but the building wasn't completed until 1472. The building is also home to the world's largest medieval stained glass window, and the whole structure was built using purely medieval techniques and equipment.
Although experts admit that there are several close contenders for this category, it's widely accepted that with a construction time of 252 years, York Minster has the longest construction period of any building in Europe. That's a whole lot of tea breaks.
